Title: Carrot Relish

Yield: 19 1/2 pints

8 Carrots
8 Onions
8 Bell peppers -red and green
3ptVinegar
1tsCelery seed
1tsMustard seed
6cSugar
1lgCabbage
1/2cSalt

Grind carrots, onions, peppers, and cabbage. Sprinkle with salt and let stand 2 hours. Drain and add sugar, vinegar, celery seed and mustard seed. Mix thoroughly and pack hot sterilized jars and seal. This should make 19 1/2-pints of relish.
